  • 1 cup Shredded Parmesan or Mozzarella Cheese 110g, freshly grated preferred
  • 15 slices Thin Pepperoni 40g, thin-cut for cupping
  • 1/2 tsp Dried Oregano 0.5g
  • 1/4 tsp Crushed Red Pepper Flakes 0.5g

  • 1 Baking Sheet Large rimmed sheet
  • 1 Parchment Paper Preferably crinkled for texture
  • 1 Wire Cooling Rack Essential for maximum crunch

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with crinkled parchment paper.
  2. Place 1-tablespoon mounds of cheese on the sheet, spaced 2 inches apart.
Assembly & Baking
  1. Press one pepperoni slice into the center of each mound and sprinkle with oregano and red pepper flakes.
  2. Bake for 6-8 minutes until edges are dark brown and charred, and the cheese is bubbly and lacy.
Cooling
  1. Allow crisps to sit on the hot pan for 2-3 minutes to firm up.
  2. Transfer to a wire rack to cool completely for maximum crispness.

Notes

Always use a baking sheet with low sides to ensure proper air circulation.
For a cleaner crisp, blot excess pepperoni oil with a paper towel immediately after baking.
