Ingredients

Main Ingredients
  • 2 scoops raspberry sherbet about 1/2 cup
  • 4-6 oz chilled Brut Champagne or Prosecco or other sparkling wine
  • 1 tbsp fresh raspberries for garnish, optional
  • 1 sprig fresh mint for garnish, optional

Equipment

  • 1 Champagne flute or coupe
  • 1 Ice Cream Scoop

Method

Assemble the Float
  1. For best results, chill your champagne flute or coupe in the freezer for 15-20 minutes.
  2. Place 1-2 scoops of raspberry sherbet into the bottom of the chilled glass.
  3. Slowly pour the chilled champagne over the sherbet. Tilt the glass as you pour to control the foam.
  4. Garnish with fresh raspberries and a sprig of mint if desired. Serve immediately.

Notes

Tip 1: Ensure all your ingredients, especially the sparkling wine, are thoroughly chilled to prevent excess foaming.
Tip 2: For a non-alcoholic version, simply substitute the champagne with sparkling white grape juice or ginger ale.
