Assemble the Float
- For best results, chill your champagne flute or coupe in the freezer for 15-20 minutes.
- Place 1-2 scoops of raspberry sherbet into the bottom of the chilled glass.
- Slowly pour the chilled champagne over the sherbet. Tilt the glass as you pour to control the foam.
- Garnish with fresh raspberries and a sprig of mint if desired. Serve immediately.
