  • 10 cups puffed rice cereal approx 280g
  • 20 oz mini marshmallows 566g
  • 1 cup creamy peanut butter 250g
  • 1/2 cup unsalted butter 115g
  • 1/2 tsp sea salt 3g
  • 2 cups chopped Reese's peanut butter cups approx 300g, folded into base
  • 2 cups milk chocolate chips 340g
  • 1 tbsp coconut oil 15ml, for gloss
  • 1 cup chopped Reese's peanut butter cups 150g, for garnish

Equipment

  • 1 9x9 inch baking pan Square pan for thick bars
  • 1 Large heavy-bottomed pot To melt marshmallows
  • 1 Silicone Spatula For non-stick mixing
  • 1 Offset spatula To smooth the chocolate topping

Method
 

Preparation
  1. Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
Cooking Process
  1. In a large pot over low heat, melt the butter. Add marshmallows and salt, stirring until completely smooth.
  2. Remove from heat and stir in 1 cup of creamy peanut butter until well combined.
  3. Fold in the puffed rice cereal and 2 cups of chopped peanut butter cups until evenly coated.
  4. Transfer the mixture to the pan and press down evenly using a greased spatula.
Topping
  1. Melt chocolate chips and coconut oil in the microwave in 30-second intervals until glossy.
  2. Pour over the cereal base, smooth with a spatula, and top with the remaining 1 cup of chopped Reese's pieces.

Notes

Use low heat for the marshmallows to keep the treats soft.
Don't refrigerate; let them set at room temperature to keep the cereal crispy.
