  • 1/4 cup All-Purpose Flour 30g
  • 3 cups Whole Milk 720ml
  • 1/2 tsp Dried Sage Flakes 1g
  • 1 tsp Coarse Ground Black Pepper 3g
  • 1/2 tsp Kosher Salt To taste
  • 4 large Buttermilk Biscuits Split and warmed
  • 1 sprig Fresh Rosemary For garnish

Method
 

Cook the Sausage
  1. Place sausage in a large skillet over medium-high heat. Brown until thoroughly cooked and a deep golden crust forms on the crumbles.
Create the Roux
  1. Reduce heat to medium. Sprinkle flour and sage flakes over the sausage and fat. Stir for 2 minutes to cook out the raw flour taste.
Simmer and Thicken
  1. Slowly whisk in milk, starting with small amounts to ensure smoothness. Simmer until the gravy is thick and opaque.
  2. Stir in the coarse black pepper and salt. Adjust seasoning to taste.

Notes

Use whole milk for the most opaque, white visual result.
If gravy is too thick, thin with a tablespoon of milk at a time.
