- In a small bowl, combine all ingredients for the homemade fajita seasoning: chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Whisk to combine.
- Place the sliced chicken, bell peppers, and onion in a large bowl. Drizzle with olive oil, then sprinkle the seasoning mix over the top. Toss thoroughly until everything is evenly coated.
- Spread the chicken and vegetable mixture in a single, even layer on the prepared baking sheet. Avoid overcrowding the pan for best results.
- Bake for 20-25 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Remove from the oven and squeeze the juice from half a lime over the entire pan.
- Serve immediately with warm tortillas and your favorite toppings like sour cream, guacamole, salsa, and shredded cheese.
