Ingredients
  

For the Fajitas
  • 1.5 lbs boneless, skinless chicken breasts sliced into 1/4-inch strips
  • 3 bell peppers (assorted colors) seeded and thinly sliced
  • 1 large red onion thinly sliced
  • 2 tbsp olive oil
  • 1 lime halved
For the Homemade Fajita Seasoning
  • 1 tbsp chili powder
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a small bowl, combine all ingredients for the homemade fajita seasoning: chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Whisk to combine.
  3. Place the sliced chicken, bell peppers, and onion in a large bowl. Drizzle with olive oil, then sprinkle the seasoning mix over the top. Toss thoroughly until everything is evenly coated.
  4. Spread the chicken and vegetable mixture in a single, even layer on the prepared baking sheet. Avoid overcrowding the pan for best results.
  5. Bake for 20-25 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender and slightly charred.
  6. Remove from the oven and squeeze the juice from half a lime over the entire pan.
  7. Serve immediately with warm tortillas and your favorite toppings like sour cream, guacamole, salsa, and shredded cheese.
