  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the sliced chicken sausage, potatoes, broccoli florets, bell peppers, and red onion. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper.
  3. Toss everything together until the sausage and vegetables are evenly coated with oil and seasonings.
  4. Spread the mixture in a single, even layer on the prepared baking sheet. Avoid overcrowding the pan for best results.
  5. Roast for 25-30 minutes, tossing halfway through, until the potatoes are tender and the vegetables are caramelized.
  6. Remove from the oven and serve immediately. Garnish with fresh parsley if desired.
