Searing and Prep
- Pat chicken dry and sear in a hot skillet skin-side down for 3-5 minutes until golden brown.
- Whisk honey, soy sauce, minced garlic, and dried herbs in a small bowl until combined.
Slow Cooking
- Place halved potatoes and diagonal carrots in the slow cooker. Top with chicken and pour over the sauce.
- Cover and cook on Low for 6-7 hours or High for 3-4 hours until chicken is tender.
Final Finish
- 30 minutes before serving, stir in the cornstarch slurry and add the green beans on top.
- Once the sauce is thick and viscous, garnish with fresh parsley and serve.
