Dough Preparation
- Whisk flour, baking powder, and fine salt in a large bowl.
- Stir together sourdough discard, yogurt, and warm water.
- Incorporate wet into dry, then knead on a floured surface for 5 minutes until supple.
- Place in a greased bowl, cover, and let rest for 60 minutes.
Shaping and Cooking
- Cut dough into 8 pieces and roll into balls.
- Roll into 1/4 inch thick ovals and hand-stretch the edges for a rustic look.
- Cook in a dry, hot cast iron skillet for 45 seconds until large bubbles form and bottom is charred.
- Flip and cook for 30-60 more seconds until both sides have golden-brown charred bubbles.
Finishing
- Immediately brush with melted butter, sprinkle with cilantro and sea salt flakes.
Notes
Ensure the skillet is very hot to get the best bubble formation.
