  • 1.5 lbs Chicken Breasts Boneless, skinless (680g)
  • 6 oz Fresh Mozzarella Cheese Sliced or thick shredded (170g)
  • 1 cup Fresh Strawberries Hulled and sliced (150g)
  • 0.5 cup Fresh Basil Leaves Whole leaves (15g)
  • 0.25 cup Balsamic Glaze Thick and glossy (60ml)
  • 2 tbsp Extra Virgin Olive Oil For searing (30ml)
  • 1 tsp Sea Salt 5g
  • 1 tsp Black Pepper 5g

Equipment

  • 1 Cast Iron Skillet For achieving a perfect golden-brown sear.
  • 1 White Ceramic Baking Dish Used for melting the mozzarella cheese.

Method
 

Preparation
  1. Pat chicken breasts dry with paper towels and season both sides with salt, pepper, and garlic powder.
  2. Heat oil in a skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden-brown sear marks appear.
  3. Transfer chicken to a ceramic dish, top with mozzarella, and broil for 2-3 minutes until bubbly and white.
  4. Top with fresh strawberry slices and whole basil leaves. Drizzle generously with thick balsamic glaze.

Notes

Use room temperature strawberries to keep the cheese soft.
Ensure the balsamic glaze is thick enough to pool rather than run off.
