  • 3 lbs Yukon Gold Potatoes Peeled and cubed (1.36 kg)
  • 1/2 cup Unsalted Butter 115g
  • 1/2 cup Whole Milk 120ml
  • 3 tbsp Fresh Dill Finely chopped (12g)
  • 1 lb Lean Ground Beef 450g
  • 1 large Red Bell Pepper Diced (150g)
  • 1 medium Yellow Onion Diced (110g)
  • 1/2 cup Tomato Sauce 120ml
  • 1.5 cups Sharp Cheddar Shredded (170g)
  • 1 tsp Smoked Paprika 2g
  • 1 tsp Dried Oregano 2g

Equipment

  • 1 Piping bag with large star tip Ateco 828 or 849 recommended
  • 1 Baking Sheet Lined with parchment paper
  • 1 Potato Ricer Ensures lump-free potatoes for piping

Method
 

Prepare the Potatoes
  1. Boil cubed potatoes until tender. Drain and let sit in the hot pot for 2 minutes to dry out excess moisture.
  2. Rice the potatoes and mix with butter, milk, and 2 tbsp dill until smooth and creamy.
Prepare the Filling
  1. Brown ground beef in a skillet. Add onions and peppers, sautéing until softened.
  2. Stir in tomato sauce and oregano. Simmer until thickened.
Assemble and Bake
  1. Pipe potato bases and ridged walls onto a baking sheet. Spoon in beef filling.
  2. Top with cheese and smoked paprika. Bake at 400°F (200°C) for 15-20 mins, then broil for 2 mins until charred.

Notes

Ensure the potatoes are warm when piping to prevent clogging.
Use an egg yolk in the mash for extra structural stability.
