  • 2 lbs boneless skinless chicken breasts cut into 1-inch chunks (907g)
  • 20 oz canned pineapple chunks with juice (567g)
  • 1/2 cup light brown sugar packed (110g)
  • 1/2 cup low-sodium soy sauce (120ml)
  • 1/4 cup rice vinegar (60ml)
  • 2 tbsp garlic minced (30g)
  • 1 tbsp fresh ginger minced (15g)
  • 3 tbsp cornstarch (24g)
  • 3 tbsp water cold (45ml)
  • 2 cups white long-grain rice dry (370g)
  • 1/4 cup green scallions sliced (25g)
  • 1 tbsp white sesame seeds (9g)

Equipment

  • 1 6-Quart Slow Cooker Or similar size crockpot.
  • 1 Small Whisk For the slurry.

Method
 

Slow Cooking Process
  1. Place chicken chunks in the slow cooker. Whisk together soy sauce, brown sugar, vinegar, garlic, ginger, and pineapple juice. Pour over chicken.
  2. Scatter pineapple chunks over the chicken. Cover and cook on LOW for 3-4 hours until chicken is tender.
  3. Whisk cornstarch and water. Stir into the pot. Cook on HIGH for 30 minutes until the glaze is dark amber and glossy.
  4. Serve over steamed white long-grain rice. Garnish with sliced green scallions and white sesame seeds.

Notes

Use canned pineapple for the best texture as fresh can make chicken too soft over time.
Ensure you use a cornstarch slurry to get that professional glossy finish.
