Preparation and Caramelization
- Melt butter in a large skillet over medium heat. Add onions and a pinch of salt. Cook for 20-25 minutes until translucent and soft.
- Add sliced mushrooms to the onions. Cook for 5-7 minutes until mushrooms are tender and golden.
Grilling the Chicken
- Pat chicken dry. Coat with olive oil, salt, pepper, and garlic powder.
- Heat grill pan to medium-high. Grill chicken for 5-6 minutes per side until dark char marks form and internal temp is 160°F (71°C).
Smothering and Finishing
- Place chicken on a heat-safe plate. Top with onion-mushroom mixture and a thick layer of shredded cheese.
- Place under the broiler for 2-3 minutes until cheese is bubbly and shows golden-brown toasted spots.
- Scatter fresh parsley flakes over the chicken and serve immediately.
Notes
Use freshly grated cheese for the best melt.
