  • 1/2 cup Old-Fashioned Rolled Oats (45g)
  • 1/2 cup Milk of choice (120ml) e.g., whole, almond, or oat milk
  • 1/4 cup Plain Greek Yogurt (60g)
  • 1 tbsp Chia Seeds (15g)
  • 1 tbsp Pure Maple Syrup (15ml)
  • 1/2 tsp Vanilla Extract (2.5ml)
  • 1 pinch Fine Sea Salt
  • 1 medium Ripe Banana sliced
  • 1 tbsp Smooth Peanut Butter (15g) thinned with a splash of milk or water
  • 1/4 tsp Ground Cinnamon (1g)

Method
 

  1. In a mixing bowl, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and salt. Stir vigorously until well-incorporated and no clumps remain.
  2. Pour the mixture into a mason jar or airtight container, seal the lid, and refrigerate for at least 4 hours, or preferably overnight.
  3. In the morning, slice the banana. In a separate small bowl, mix the peanut butter with about 1/2 teaspoon of milk or warm water until it reaches a smooth, glossy, drizzle-able consistency.
  4. Arrange the fresh banana slices over the soaked oats. Generously drizzle with the thinned peanut butter and finish with a fine dusting of ground cinnamon.
