  • 8 oz full-fat cream cheese Softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter Melted and slightly cooled
  • 3/4 cup light brown sugar Packed
  • 1/4 cup granulated sugar
  • 1 large egg Room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/4 cup thick salted caramel sauce
  • 1/4 cup powdered sugar Mixed with 1 tbsp milk for icing
  • 1/4 cup crushed graham crackers For golden cookie crumbles

  • 1 Large Cookie Scoop 3 tablespoon capacity

Method
 

Instructions
  1. Beat cream cheese, powdered sugar, and vanilla until smooth. Scoop 1-tablespoon dollops onto a parchment-lined plate and freeze for at least 1 hour.
  2. Whisk melted butter, brown sugar, and granulated sugar until glossy. Whisk in the egg and vanilla extract.
  3. Gently fold in the flour, baking soda, and salt until streaks disappear.
  4. Flatten 2 tablespoons of dough in your palm, place a frozen cream cheese disc in the center, wrap the dough around it, and seal tightly into a ball.
  5. Bake at 350°F (175°C) on a parchment-lined sheet for 12-14 minutes until edges are golden-brown. Let cool completely.
  6. Drizzle with thick salted caramel sauce and thin white icing. Sprinkle with crispy golden cookie crumbles before the drizzles set.

Notes

Do not skip freezing the cream cheese discs.
Ensure the cookie dough is perfectly sealed around the filling.
