  • 2 cups fresh baby spinach (60g)
  • 1 cup diced red Roma tomatoes (150g), seeds removed

Preparation and Cooking
  1. Place the freshly grated sharp yellow cheddar cheese into a large bowl. Sprinkle the cornstarch over the top and toss well until the cheese is evenly coated.
  2. Transfer the coated cheddar to the slow cooker. Add the cubed cream cheese, evaporated milk, garlic powder, and onion powder to the pot.
  3. Cover the slow cooker and cook on the LOW setting for 1 to 1.5 hours. Check and stir every 30 minutes until the cheese is completely melted, thick, and creamy.
  4. Once the cheese is perfectly smooth, gently fold in the fresh baby spinach and diced red Roma tomatoes. Cover and cook for an additional 15 minutes.
  5. Stir the dip to distribute the cooked, wilted green spinach and small red chunks of tomato. Turn the slow cooker to the Warm setting and serve immediately with crisp yellow corn tortilla chips.
