  • 1 large (10-inch) flour or whole wheat tortilla
  • 3 tablespoons hummus any flavor
  • 4 ounces sliced deli turkey low-sodium
  • 1 large handful baby spinach
  • 0.25 bell pepper thinly sliced
  • 0.25 cucumber cut into matchsticks
  • 0.25 cup shredded carrots
  • 2 slices red onion thinly sliced
  • 1 tablespoon crumbled feta cheese optional

Method
 

  1. Gently warm the tortilla in a dry skillet over medium heat for about 15 seconds per side, or in the microwave for 15-20 seconds. This step is crucial for making it pliable and preventing cracks during rolling.
  2. Lay the warm tortilla on a flat surface. Spread the hummus in an even layer across the entire tortilla, leaving a small 1-inch border around the edges. This creates a moisture barrier.
  3. In a line down the center of the tortilla, layer your ingredients. Start with the handful of baby spinach, then add the slices of turkey. Top with the sliced bell pepper, cucumber matchsticks, shredded carrots, and thin slices of red onion. Finish with a sprinkle of crumbled feta cheese, if using.
  4. To roll the wrap, first fold in the two shorter sides over the fillings. Then, take the edge closest to you and begin to roll it away from you, keeping the roll tight and tucking the fillings in as you go to create a compact, secure wrap.
  5. Slice the wrap in half on a diagonal and serve immediately. If meal prepping, wrap it tightly in plastic wrap or beeswax paper and store in the refrigerator for up to 3 days.

Notes

Tip 1: Don't overfill the wrap! It might be tempting, but it will be difficult to roll and more likely to fall apart.
