  • 8 oz Cremini Mushrooms Sliced uniformly (227g)
  • 5 oz Fresh Baby Spinach Tenderly wilted (142g)
  • 2 tbsp Extra Virgin Olive Oil Divided for searing and glazing (30ml)
  • 1 tsp Dried Red Pepper Flakes Adjust for desired heat (2g)
  • 1/2 tsp Coarse Ground Black Pepper For texture and floral heat (1g)
  • 1 tsp Kosher Salt Or to taste (6g)
  • 2 cloves Garlic Minced (10g)

Equipment

  • 1 12-inch Cast Iron Skillet Ensures the best browning and caramelization.
  • 1 Metal Spatula Used to break up turkey and scrape flavorful brown bits.

Method
 

Sear the Mushrooms
  1. Heat 1 tbsp olive oil in the skillet over medium-high heat. Add mushrooms in a single layer and sear for 4 minutes without stirring until deep golden-brown.
Brown the Turkey
  1. Remove mushrooms. Add remaining oil and turkey to the pan. Press flat and let sear for 5 minutes until caramelized edges form. Break into crumbles and add garlic and half the spices.
Final Assembly
  1. Return mushrooms to the pan. Add spinach and fold gently with tongs for 90 seconds until wilted. Remove from heat and garnish with remaining pepper and oil.

Notes

Use a cast iron pan for the best caramelized edges on the turkey.
Don't wash mushrooms; wipe them clean to ensure they sear instead of steaming.
