Ingredients
  

Naan Dough
  • 3 cups Gluten-Free All-Purpose Flour 420g; ensure it contains xanthan gum
  • 2 tbsp Psyllium Husk Powder 18g; provides elasticity
  • 1/2 cup Vegan Greek-Style Yogurt 120g; unsweetened
  • 1 cup Warm Water 240ml; 105-110°F
  • 2 tsp Instant Yeast 7g
  • 1 tbsp Organic Cane Sugar 12g
  • 1 tsp Baking Powder 5g
  • 1 tsp Sea Salt 6g
Garlic Butter Topping
  • 4 tbsp Vegan Butter 56g; melted
  • 3 cloves Garlic minced
  • 1/4 cup Fresh Cilantro 10g; finely chopped

Equipment

  • 1 Cast Iron Skillet Essential for high-heat charring.
  • 1 Rolling Pin For shaping the dough.
  • 1 Pastry Brush To apply the vegan butter sheen.

Method
 

Dough Preparation
  1. Combine warm water, sugar, and yeast. Let foam for 10 minutes, then whisk in psyllium husk powder and sit for 3 minutes until a gel forms.
  2. Whisk dry ingredients. Add yeast gel, yogurt, and 1 tbsp butter. Knead for 2-3 minutes until a soft, pale cream-colored dough forms.
  3. Place in an oiled bowl, cover, and rest in a warm spot for 45-60 minutes.
Cooking and Finishing
  1. Divide dough into 6 balls and roll into 1/4 inch thick circles with slightly irregular edges.
  2. Cook in a hot, dry cast iron skillet for 30-60 seconds per side until dark brown and black charred circular blister marks appear.
  3. Brush with melted garlic butter to create a glistening sheen and sprinkle with fresh cilantro.

Notes

Use a heavy cast iron skillet for best char marks.
Ensure your gluten-free flour blend has xanthan gum for the softest texture.
