  • 3/4 cup Whole Milk 180ml
  • 1 tsp Baking Powder 5g
  • 1 tbsp Granulated Sugar 12g
  • 1 Large Egg Beaten
  • 1/2 tsp Kosher Salt Plus more for sprinkling
  • 1/4 tsp Black Pepper Freshly cracked
  • 2 cups Vegetable Oil For frying
  • 2 tbsp Fresh Parsley Finely chopped for garnish

Equipment

  • 1 Mandoline slicer For paper-thin onion slices
  • 1 Cast Iron Skillet For even heat distribution
  • 1 Wire Cooling Rack To maintain crispness

Method
 

Prepare the Batter
  1. In a medium bowl, combine the flour, sugar, baking powder, salt, and pepper.
  2. Whisk in the milk and egg until a smooth, thick batter forms.
Fold and Fry
  1. Gently fold the thinly sliced onions into the batter until every slice is well-coated.
  2. Heat oil in a skillet to 365°F. Drop mounds of the onion mixture into the oil. Fry for 2-3 minutes per side until dark golden-brown with charred edges.
  3. Remove to a wire rack. Sprinkle with salt and garnish with fresh chopped parsley immediately.

Ensure the oil is at the correct temperature before frying to avoid greasy fritters.
