Ingredients

  • 4 boneless, skinless chicken breasts (about 6-8 oz each) Pound to an even thickness for best results.
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt Or to taste.
  • 1/4 tsp black pepper Freshly ground is best.

Equipment

  • 1 Baking Dish or Sheet Pan
  • 1 Meat Thermometer

Method

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with a paper towel. For even cooking, pound the thicker parts of the chicken until they are a uniform thickness.
  2. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and pepper. Drizzle the olive oil over the chicken, then sprinkle the seasoning mix evenly on all sides.
  3. Place the seasoned chicken in a baking dish. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  4. Remove the chicken from the oven and let it rest on a cutting board for 5-10 minutes before slicing. This is crucial for keeping it juicy. Serve warm.

Notes

Even Thickness is Key: Don't skip pounding the chicken. It's the most important step for juicy, evenly cooked results.
Don't Overcook: A meat thermometer is your best friend for avoiding dry chicken. Pull it from the oven as soon as it hits 165°F.
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
