Main Ingredients
  • 1.5 lbs Chicken Breasts 680g, sliced into cutlets
  • 0.5 cup All-Purpose Flour 65g, seasoned with salt and pepper
  • 2 Large Eggs beaten
  • 2 cups Panko Breadcrumbs 120g
  • 1 cup Vegetable Oil 240ml, for frying
  • 4-6 slices Deli Ham Thinly sliced pink ham
  • 4-6 slices Swiss Cheese Thick slices for melting
  • 2 tbsp Fresh Parsley 8g, finely chopped
  • 0.5 cup Mayonnaise 120ml
  • 2 tbsp Dijon Mustard 30ml
  • 2 tbsp Honey 30ml

Equipment

  • 1 Heavy-Bottomed Skillet Cast iron or stainless steel preferred.
  • 1 Meat Mallet For pounding chicken to even thickness.
  • 1 Baking Sheet For melting the cheese under the broiler.

Method
 

Prepare the Chicken
  1. Place chicken cutlets between plastic wrap and pound to a uniform 1/2 inch thickness.
  2. Coat chicken in flour, dip in beaten eggs, and press firmly into panko breadcrumbs.
Frying and Finishing
  1. Fry in 1/4 inch of oil over medium-high heat for 3-4 minutes per side until golden-brown and crispy.
  2. Top with ham and Swiss cheese; broil for 1-2 minutes until cheese is bubbly and white.
  3. Drizzle with honey mustard sauce and sprinkle with chopped fresh parsley.

Notes

Use a wire rack to keep the bottom crispy while broiling.
Ensure the oil is hot enough before adding chicken to prevent sogginess.
