Pistachio Mascarpone Cake Components
  • 16 oz (450g) Mascarpone cheese Full fat, chilled
  • 1.5 cups (360ml) Heavy whipping cream 36% fat, very cold
  • 0.5 cup (125g) Pure pistachio paste Unsweetened
  • 1.25 cups (150g) Powdered sugar Sifted
  • 1 tsp (5ml) Vanilla bean paste
  • 1 cup (150g) Roasted pistachios Unsalted, finely crushed
  • 1 cup (225g) Unsalted butter Softened
  • 1.5 cups (300g) Granulated sugar
  • 4 large Eggs Room temperature
  • 2.5 cups (310g) All-purpose flour
  • 2 tsp (10g) Baking powder
  • 1 cup (240ml) Whole milk

Equipment

  • 1 Stand mixer with paddle and whisk attachments
  • 3 8-inch cake pans
  • 1 Offset spatula

Method
 

Prepare the Golden Sponge
  1. Cream softened butter and sugar until light and dandelion yellow. Add eggs one at a time.
  2. Fold in dry ingredients and milk. Divide into three 8-inch pans and bake at 350°F (175°C) for 25-30 minutes until golden.
Create the Filling
  1. Mix cold mascarpone and pistachio paste until smooth. Slowly add heavy cream.
  2. Add powdered sugar and vanilla. Whip until thick, stable peaks form and the color is a pale green.
Assemble and Decorate
  1. Spread thick layers of filling between the three golden sponge layers. Smooth the top with frosting.
  2. Heavily garnish the top surface with a dense layer of finely crushed roasted pistachios.

Notes

Use Turkish pistachios for the most vibrant green color.
