Vegetable Medley
  • 3 cups (250g) Broccoli Florets Cut into bite-sized pieces
  • 2 large (150g) Carrots Sliced diagonally
  • 1 medium (120g) Red Bell Pepper Sliced into strips
  • 1.5 cups (150g) Snap Peas Trimmed
  • 3 tbsp (45ml) Extra Virgin Olive Oil For the glaze
  • 1 tsp (2g) Cracked Black Pepper Freshly ground
  • 0.5 tsp (1g) Red Pepper Flakes Adjust for heat
  • 1 tsp (6g) Kosher Salt Added at the end

Method
 

Preparation and Searing
  1. Place the cast iron skillet over medium-high heat until water droplets dance on the surface. Add olive oil.
  2. Add carrots and sauté for 2 minutes. Add broccoli florets and sear for 3-4 minutes until charred edges appear.
  3. Toss in peppers and snap peas. Sauté for 2-3 minutes until bright and crisp-tender.
  4. Remove from heat. Add salt, black pepper, and red pepper flakes. Toss to glaze and serve immediately.

Notes

Ensure vegetables are completely dry before adding to the pan to avoid steaming.
Add salt only at the very end to prevent the vegetables from releasing moisture too early.
