  • 8 oz Lo Mein Noodles 225g, thick wheat noodles
  • 1 lb Chicken Breast 450g, cut into bite-sized chunks
  • 6 cloves Garlic Finely minced
  • 2 tbsp Dark Soy Sauce For deep brown color
  • 3 tbsp Light Soy Sauce For salt and umami
  • 3 tbsp Brown Sugar 45g, for stickiness
  • 1 tsp Dried Red Pepper Flakes Adjust for heat preference
  • 1 tbsp Toasted White Sesame Seeds For garnish
  • 2 stalks Green Scallions Sliced

Equipment

  • 1 Cast Iron Skillet or Wok Required for achieving charred edges on chicken.
  • 1 Microplane For finely mincing the garlic cloves.

Method
 

Prep and Sear
  1. Cook lo mein in salted water for 5-7 minutes until al dente. Drain and set aside.
  2. Heat oil in a skillet. Pat chicken dry and sear until golden-brown charred edges appear, about 5 minutes.
Glaze and Combine
  1. Add minced garlic and red pepper flakes to the pan, cooking until fragrant (about 45 seconds).
  2. Whisk soy sauces, sugar, and cornstarch slurry into the pan. Toss with noodles and chicken until sticky and translucent.

Notes

Pat the chicken dry to ensure a good sear.
Use dark soy sauce specifically to get that rich mahogany color.
